Easy Apple Cranberry Muffins

I try to keep these easy apple cranberry muffins on hand to serve for an afternoon snack or a quick breakfast. These tasty muffins also make a great gift for teachers or loved one or as hostess gifts. 

The apples and cranberry are a delicious combination that is bursting with flavor in this recipe! This recipe is so easy and if followed correctly, always turns out just perfectly. A sweet sprinkle of sugar adds an irresistible sweet crunch to the top of the fluffy muffin.

Apple Cranberry Muffins

Whipping cream and butter give this easy muffin recipe a ton of flavor. Add in fresh apples and dried cranberries and you will soon know why this is a favorite at my house.  I really like how this recipe adds the fruit in with the dry ingredients. The fruit gets covered in the mixture and absorbs all of the tasty goodness. Everything comes together so quickly, you can whip up a batch in jiffy!

Don’t forget to sprinkle the tops with sugar for that extra crunch! This is my favorite muffin base recipe as it always comes out perfect. Hint: Change out the fruit and try different combinations like these Easy Blueberry Muffins.

How to make Apple Cranberry Muffins

  1. I always start the process of baking by pulling together all of my ingredients and tools. This is called “Mise en place” in culinary school and iI have found this step is always a time saver! 
  2. I like to chop my apples in extra small pieces for muffins so they soften nicely.
  3. Add apples and cranberries into the dry mixture first so they have a coating of flour and won’t sink to the bottom of muffin mixture.
  4. Use heavier portions in muffin pan, I like to fill each space to at least  3/4 of the way or almost full so my muffins have that perfect muffin top!
  5. After portioning the muffin mixture in the pan, I go back and place some apples and cranberries on the very top so there are some visible when they rise in the oven.

Yield: 12 muffins

Easy Apple Cranberry Muffins

easy Apple Cranberry Muffins are sweet, crumbly, and have a wonderful combination of apple, cranberry, and cinnamon. This is a great quick bread recipe to make when you need an easy breakfast recipe for your family or to enjoy as a snack!

Easy apple and cranberry muffins spiced with a little cinnamon bring the flavors of fall to a delicious muffin recipe that is perfect for breakfasts or snacks.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 4 Eggs
  • 119 grams Heavy cream (1/2 qt)
  • 340 grams Granulated sugar (12 oz)
  • 21 grams Baking Powder (1 1/2 Tbsp)
  • 680 grams Cake flour (1.5 lbs)
  • 8 grams Kosher salt (1/2 Tbsp)
  • 2 grams Cinnamon (1 tsp)
  • 230 grams Apple (2 cups)
  • 120 grams Dried Cranberries (1 cup)
  • 227 grams Unsalted butter, melted (8 oz)

Instructions

  1. Whisk the eggs and cream together by hand.
  2. Sift the dry ingredients together.
  3. Peel, core, and chop apples.
  4. Add apples and cranberry into flour mixture, tossing to coat them evenly.
  5. Add the dry ingredients to the egg mixture and stir until about two-thirds mixed. Add the melted butter and finish mixing.
  6. Portion into greased muffing cups and dust with sanding sugar.
  7. Bake at 375 degrees for 15-18 minutes.

Muffin Recipe Variations

  • As I mentioned above this base is terrific and perfect to add virtually any fruit to. Cranberry goes great with orange so you could combine those ingredients for a delicious change. 
  • I used dried cranberries but you could use fresh (sliced in halves) or even frozen cranberries instead. 
  • Substitute dried blueberries or raisins for the cranberries altogether. 
  • Add chopped nuts for a little extra texture and crunch.

How to store Cranberry Apple Muffins

These muffins will stay fresh at room temperature for 2-3 days. Be sure to store in an airtight container or zip loc bag.  Muffins may be easy frozen in airtight containers. When you are ready to serve thaw them and enjoy.
