This Caramel Apple Pie Recipe is made from scratch and is one of my all time favorites for Thanksgiving. 

This pie is similar to my Best Apple Pie Recipe, but I’ve added a creamy caramel sauce and a streusel topping. I think this fall pie recipe will be your new favorite!

Why I love this Caramel Apple Pie Recipe

The creamy caramel sauce, streusel topping, and beautiful decorative pie crust make this a very special Thanksgiving pie to serve for family and friends! This is such a delicious pie that is sure to become your new favorite Thanksgiving dessert.

Thanksgiving Caramel Apple Pie Recipe

Is there anything better than the traditional Thanksgiving menu and all the fall baked goods and yummy soups? Whether we are baking some pumpkin muffins or making Taco Soup in the slow cooker, fall is my favorite time of year.

You loved the apple pie recipe I’ve shared before, but after making caramel sauce in culinary school, I decided I needed to shake up the traditional recipe and bring you this delightfully delicious version.

This caramel apple pie recipe is time consuming, however the recipe is easy to follow. If you like caramel, and you like apple pie, this recipe is worth every second! 

How to make Caramel Apple Pie Filling:

  • Prepare filling first. Slice apples, placing them in a bowl of water to prevent browning.
  • Mix together dry ingredients. Add sliced apples to mixture, cover and allow to set.

  • Turn dough onto lightly floured surface and lightly knead together until cohesive, but do not over mix. If you still see small pieces of butter, that is okay!
  • Divide into portions for bottom crust and decorations.
  • Roll out dough to two inches larger than your pie plate. Fold dough in half, then in half again and lift to press dough into pie plate.

Caramel Sauce Tips

  • Combine the sugar and water in a heavy medium saucepan. Stir until sugar is dissolved.
  • Set heat on high and bring to a boil. With a wet brush, brush down any sugar granules that form.
  • As sugar comes to a boil, add the lemon juice and do not stir. Continue boiling until the sugar turns a dark golden brown color and the sugar has caramelized.
  • Remove from heat and slowly add the cream, stirring to combine.
  • Add butter pieces and stir until it melts. If clumps remain, simply reheat the caramel a bit.
  • Strain the caramel sauce and cool completely.
  • Pour on top of apple mixture in pie pan.

How to Prepare the Streusel Topping

This Caramel Apple Pie recipe has a crumb topping that provides the perfect texture, and it’s such an easy recipe to pull together!

  • Mix together dry ingredients.
  • Cut in cold butter until the mixture is course and crumbly.
  • Sprinkle on top of apples and caramel sauce, even with the top of your pie pan and crust.

Create a Decorative Pie Crust

  • Cut out fall shapes with pie punches or small cookie cutters. Place around the edge and middle of the pie. 
  • Make an egg wash with 1 egg and 1 tbsp of water. Brush over the pie and allow to set in the refrigerator overnight to allow the crust shapes to set.

  • Bake for 15 minutes on 350º F, lower to 325º F and bake for approximately 40 minutes. If crust is browning too quickly, add a crust shield or cover with aluminum foil.
  • After pie is finished baking, drizzle some creamy caramel sauce, allow to cool for just a bit and it will be ready to serve.

How to Store Caramel Apple Pie

Does Caramel Apple Pie need to be refrigerated? While it can sit on the counter, it will stay fresh longer if stored in an air tight container or wrapped tightly with plastic wrap in the refrigerator for up to four to five days.

How to Reheat Caramel Apple Pie

Reheat the pie in a 325 degree oven for 8 to 10 minutes.

Can Caramel Apple Pie Recipe be made ahead of time?

You can prepare the pie dough and freeze it if needed, or leave in the refrigerator up to two days. The apple filling can be made up to two days ahead of time and stored in the refrigerator. You can also assemble the pie fully up until it’s time to bake and store in the refrigerator for up to two days.

Ingredients

  • Apple Pie Filling:
  • 7 Apples, peeled, cored and thinly sliced
  • 46 g All Purpose Flour (⅓ cup plus 1 tbsp)
  • 142 g Sugar (⅔ cup plus 1 tbsp)
  • 3 g Cinnamon (1 1/2 tsp)
  • 2 g Cornstarch (1 tsp)
  • Pie Crust:
  • 510 grams All Purpose Flour (18 oz)
  • 36 grams Granulated Sugar (3 tbsp)
  • 8 grams Kosher Salt (1 1/2 tsp)
  • 425 grams Butter (15 oz)
  • 57 grams Filtered Water (2 oz)
  • Fall Leaf Pie Punch
  • Caramel Sauce:
  • 118 ml Water (4 fl oz)
  • 454 grams Sugar (1 lb)
  • 15 ml Lemon Juice (.5 fl oz)
  • 237 ml Heavy Cream, at room temp (8 fl oz)
  • 43 grams Butter, unsalted (1.5 oz)
  • Streusel:
  • 454 grams All-purpose Flour (1 lb)
  • 2 grams Cinnamon (1 tsp)
  • 170 grams Brown sugar (6 oz)
  • 113 grams Granulated sugar (4 oz)
  • 340 grams Unsalted Butter, cold (12 oz)

Instructions

  1. Prepare your Apple Filling first. Slice apples, placing them in a bowl of water to prevent browning.
  2. Mix together dry ingredients. Add sliced apples, cover and allow to set.
  3. Prepare the crust. Combine dry ingredients in mixer bowl. Mix thoroughly at low speed with paddle attachment.
  4. Add butter and mix together. For mealy pie dough (for both bottom and top crusts) mix until you get a sandy texture.
  5. Add water and mix just until combined.
  6. Turn dough onto lightly floured surface and lightly knead together until cohesive, but do not over mix. If you still see small pieces of butter, that is okay!
  7. Divide into portions for your top and bottom crust. You can save any unused dough by flattening into discs and wrapping for freezer storage.
  8. Prepare the Caramel Sauce.
  9. Combine the sugar and water in a heavy medium saucepan. Stir until sugar is dissolved.
  10. Set heat to high and bring to a boil. With a wet brush, brush down any sugar granules that form.
  11. As sugar comes to a boil, add the lemon juice and do not stir. Continue boiling until the sugar turns a dark golden brown color and the sugar has caramelized.
  12. Remove from heat and slowly add the cream, stirring to combine.
  13. Add butter pieces and stir until it melts. If clumps remain, simply reheat the caramel a bit.
  14. Strain the caramel sauce and cool completely.
  15. Prepare the Streusel Topping. Mix together dry ingredients.
  16. Cut in the butter until the mixture is course and crumbly.
  17. Sprinkle on top of apples, even with the top of your pie pan and crust.
  18. Add fall leaf crust pieces to the edge and middle of your pie.
