Add a cup of coffee or apple cider and you have the perfect homemade treat on a chilly fall day! These pumpkin chocolate chip muffins are a favorite in my family.
How to bake Pumpkin Chocolate Chip Muffins
Preheat the oven to 400 degrees. Generously grease all 12 cups of your muffin tins with non-stick cooking spray.
I use my favorite pumpkin pan to add a little extra festive touch to my pumpkin chocolate chip muffins recipe. I love how this pan creates little mini pumpkins!
The next step is to beat the eggs, sugar, and vanilla in a large bowl.
After the eggs and sugar are mixed, add the pumpkin puree. After the pumpkin is mixed in, I add the coconut oil.
If the coconut oil is in solid form, scoop out the exact amount needed and place directly in your mixture.
Place all the dry ingredients: flour, spices, soda, salt together in a bowl and gently mix. This allows all the spices to be distributed evenly.
After that, add the dry ingredients to the wet mixture and mix, just until combined (a few lumps are just fine).
The mixture should be thick at this point.
Gently fold in the chocolate chips. The combination of chocolate and pumpkin is so good!
The chocolate chips melt and add a warm chocolatey sweetness to the muffins.
Divide the batter evenly between the 12 muffin cups, or until muffin cups are 3/4 filled.
Cooking Temperatures
Bake at 400 degrees for 15 minutes, or until a toothpick inserted into a muffin comes out clean.
I like to place the muffin tin on a cooling rack to cool for about 5 minutes. These are very moist and a few minutes in the pan allows them to hold their shape for later.

These muffins can be stored at room temperature in an airtight container for 2 days, or in the refrigerator for up to 4 days.
How to Reheat
Place the unwrapped muffin on a paper towel, paper plate, or plate and microwave on high for 30 seconds.
I love when my house smells wonderful with scents of pumpkin and cinnamon!

- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions

2. In a large bowl, beat the eggs, sugar and vanilla.
3. Add the pumpkin puree and mix.
4. Add the flour, spices, soda, and salt and mix, just until combined (a few lumps are okay).
5. Fold in the chocolate chips.
6. Divide the batter evenly between the 12 muffin cups. Bake 15 minutes, or until a toothpick inserted into a muffin comes out clean.
7. Place the muffin tin on a cooling rack to cool for about 5-10 minutes.
8. These muffins will keep at room temperature for 2 days, or in the refrigerator for up to 4 days.
