Crunchy Taco Bowls

Cook Time 11 minutes
Total Time 31 minutes

Ingredients

  • 1 lb lean ground beef, browned and drained
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Cumin
  • 2 tbsp Chili Powder
  • 3/4 cup water
  • 1 cup diced tomatoes
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 1/2 cup whole milk
  • 4 oz. medium cheddar, shredded (about 1 cup)
  • 1/4 tsp salt
  • 1/8 tsp chili powder
  • 24 wonton wrappers
  • sour cream, avocado, and cilantro for garnish

Instructions

  1. Preheat oven to 350 degrees F. Coat a 12 cup muffin tin with cooking spray.
  2. Brown and drain ground beef.
  3. Add salt, pepper, chili powder, cumin and water. Stir on medium heat for 5 min. Turn down to low and let simmer for a few more minutes.
  4. Melt butter in a small sauce pot. Add flour and whisk together until foamy. Continue whisking the mixture for a minute.
  5. Add milk, chili powder, and salt to the flour mixture. Turn the heat up to medium-high and bring the milk to a simmer. Continue whisking until it thickens. Once it reaches nappe consistency (it’s thick enough to coat a spoon), turn down heat.
  6. Gradually add the shredded cheese until fully combined. Be careful not to overheat the cheese sauce.

To Build Taco Bowls:

  1. Add three wonton wrappers to the muffin tin, overlapping each one to cover the bottom.
  2. Add a layer of shredded lettuce in the bottom.
  3. Follow with a large spoonful of the beef mixture.
  4. Add diced tomatoes to your liking.
  5. Add 1 tablespoon of the Cheddar Cheese Sauce.
  6. Bake on 350 degrees for 10-12 minutes.
  7. Serve immediately with toppings of choice. Sour cream, avocado, and cilantro are perfect toppings!

  5. I see dorito chips in the picture but no mention in the recipe. When do they get added? The recipe does say crunchy.

    1. Great question, the chip you see is actually the wonton wrappers! I put three pieces in each muffin tin so they create a little bowl (see the pictures where I’m layering the ingredients). As they are baking the wonton wrappers become crunchy like tortilla chips. Let me know if you have other questions!
