It’s been a while since I’ve shared a dinner recipe and I have a special one for you today! There are some health goals to reach so I’ve been researching the Keto diet plan and I love what I’m learning so far. I recently made this healthy and easy Keto sausage and veggie recipe for my family and for my cooking club. Let me tell you, it was a huge hit. It’s not only yummy, but so easy as you toss together all ingredients on one pan and throw it in the oven. This is a huge win in my book!
Easy Keto Sausage and Veggie Recipe

My husband is a big meat eater, especially for all things sausage, and my boys are following suit. This meal was such a huge hit for our entire family, and I always love it when the kids are just as excited and satisfied as the adults. Plus anytime I can throw all the ingredients together and cook immediately is something I can appreciate.
Now let’s get to the sausage and veggie recipe!
Sausage and Veggie Recipe
Ingredients
- 558 g red potatoes (4 cups)
- 2 bunches fresh green beans
- 468 grams broccoli (3 cups)
- 3 large sweet bell peppers
- 1 pkg sausage links
- 148 ml olive oil (10 Tbsp)
- 3 grams garlic powder (1 tsp)
- 8.2 grams Italian seasoning (3 Tbsp)
- 4 grams ground pepper (1/2 tsp)
- 2 grams salt (1/4 tsp)

- Preheat oven to 375 degrees.
- Slice potatoes and sausage into quarters.
- Combine seasonings with olive oil, stir well.
- In large bowl or baggie, toss ingredients with sausage and veggies.
- Place sausage and veggie mixture on a large lined baking pan, be sure to spread them out and allow the veggies some breathing room.

Variations
You could easily add additional seasoning if you have a favorite in mind, or switch this up with different vegetables. One important step is to let the sausage and veggies in your pan have some room to breathe, don’t crowd them too much so they can all cook evenly. About halfway through, just toss them over to let the other side bake and your delicious meal will be ready in no time!
Another thing I love about this recipe is that you can easily feed a crowd… simply place all ingredients divided among two large baking sheets and bake at the same time. I served with white rice for my kids to enjoy but you can use quinoa or another healthy alternative like cauliflower rice (which is very good!).
