What is a good menu for Brunch?
I love serving an array of items so we can have a bite of all our favorite breakfast foods and there is something for everyone. My menu has fruit, protein, dairy items, and of course, a few pastry and dessert options as well.
As a southerner, I don’t think breakfast or brunch is complete without creamy sausage gravy and buttermilk biscuits!
Chef Tips for Making Sausage Gravy Biscuit Cups
This new take on your typical Biscuits and Gravy meal is just as good as the classic recipe, but they are so easy to make and create a beautiful presentation for your Christmas brunch.
- Brown your sausage first. Use a meat chopper to help break up the meat and ensure even cooking.
- Use Pioneer Buttermilk Baking Mix and Gravy Mix. I love using Pioneer to produce an easy-to-prepare and delicious meal. Their variety of wholesome, homestyle mixes are perfect for those mornings I want things to be easier so I can enjoy the family more and move along in our day.
- Use a whisk vigorously to help blend gravy mix with a ½ cup of water to avoid lumps.
- Bring 1 ½ cups of water to rolling boil. Add gravy mixture into boiling water to help produce a thicker gravy.
- Prepare a floured surface to knead your biscuit dough. After mixing milk and Pioneer Buttermilk Baking Mix, gather biscuit mixture into a ball, and turn it over several times, kneading as you go. Use additional flour as needed for any remaining sticky places in the dough. Roll out to ½” thickness.
- Use a 3″ cutter. Once you’ve cut the first round of shapes, gently roll remaining dough together and cut additional shapes. I was able to get 12 biscuits out of this dough.
- Allow the biscuit dough to form around the bottom and sides of your cups.
- Spoon sausage gravy on top. I found filling the cups almost to the top is just the right amount of gravy.
- Bake for 18-20 minutes on 375F.
