Spring is here and it’s the perfect time for getting ready for Easter Brunch. I have an easy and deliciously savory brunch recipe for you today. This Ham and Potato Casserole recipe is perfect for serving a crowd for the holidays or enjoying a cozy  meal at home with your family.

Ham and Potato Casserole

This hearty casserole makes a great brunch dish as it ticks all the boxes. Tasty, filling and easy! As you may remember, I shared Christmas Brunch recipes made with Pioneer Gravy Mix and we thought it would be fun to create an Easter brunch recipe to enjoy this weekend and to make life a little easier.

Pioneer is known for their Pancakes, Biscuits, and Gravy mixes because they are made with quality ingredients that help reduce time in the kitchen but still provide a homestyle, delicious meal. 

This Cheesy Potato Casserole couldn’t be much easier. Just combine all the ingredients, toss together, add a little cheese on top and bake!

Ham and Potato Casserole Recipe  

16 oz sour cream
10.5 oz cream of chicken soup
6 Tbsp unsalted butter
Pioneer Roasted Gravy Mix
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 1/2 cups cheddar cheese
1 cup diced ham
1/3 cup bacon
1/4 cup green onions
2 lb diced potatoes

How to make Ham and Potato Casserole

Preheat over to 350º.
 
Whisk together cream of chicken soup, sour cream, melted butter, Pioneer Roasted Pork Gravy mix, garlic powder, salt & pepper in large bowl until smooth.

Next add in sliced potatoes,  1 cup of cheese, ham, bacon and green onions and toss together to coat well.

Spread into prepared baking dish and bake uncovered in oven for 20 minutes.

Remove from oven and sprinkle with remaining 1/2 cup cheese and bake for 8-10 minutes longer until cheese is melted and bubbly.

Tips for Making a Cheesy Potato Casserole

  • To save time, purchase frozen diced potatoes. I love to keep these on hand in the case I am in a hurry. If you have extra time, you can certainly dice whole potatoes.
  • If you prefer the texture of au gratin potatoes in your potato casserole, you can substitute the diced potatoes.
  • You can make this recipe the night before, and bake in the morning.

Variations

  • You could easily add diced peppers and onions to this mixture.
  • If you aren’t a big fan of cheese, this casserole is delightful without the cheese.

Serving Suggestions

  • This potato casserole recipe can be served right out of the oven.
  • Because this casserole includes both ham and bacon, it can stand a long as an entrée, or you can use it as a side dish. 
  • I love to serve this with warm, fresh bread. Pioneer’s  Yellow Cornbread Mix would also be perfect to serve alongside this dish.
