With Spring in our midst and Easter coming soon, I’ve been wanting to create some colorful, light dessert recipes. It’s time to put the cold weather behind us and say goodbye to Winter! And nothing screams Spring more than a sweet, colorful dessert. We will have several family gatherings over the next few weeks, and I will definitely be serving this No Bake Rainbow Cheesecake.

By the way, have you seen the new Nestlé® Coffee-mate® The Cheesecake Factory At Home flavors? I purchased the Strawberry Cheesecake to give my recipe a little fun surprise flavor (who doesn’t love strawberry cheesecake?) and while at Walmart, I saw they had a Dulce de Leche Caramel Cheesecake flavor as well. Oh my, it has taken my coffee to another level! I didn’t think I could love coffee more!

This dessert has several special ingredients that make it, well, oh so special: the strawberry cheesecake creamer, cream cheese, and a buttery graham cracker crust. You put those things together, along with a few other ingredients and you get a sweet, fluffy, creamy, make-you-want-to-hide-in-the-closet dessert. Add a little food coloring, a dash of sprinkles, and whip up some homemade whip cream, and you’ll suddenly look like a master confectioner.
This No Bake Rainbow Cheesecake was incredibly easy to make, and the best part? It’s NO bake! Pull out your muffin mold, hand mixer, and a few bowls, and 30 minutes later you’ll have a dessert sitting in the freezer just waiting for your loved ones to devour. I made this with a silicone jumbo muffin mold which is a perfect serving size for adults, but if you wanted to go a little smaller for a kid-sized dessert portion, you would use the regular size silicone muffin mold, but the key here is to use a silicone mold so you can easily pop out the mini cheesecakes without disturbing their shape.
Also, who doesn’t love a rainbow dessert? If you haven’t noticed, rainbow desserts are everywhere! This would be perfect for a unicorn party, an Easter party, or just an excuse to whip up a magical looking dessert! And did I mention how easy it is to make? It’s easy, pinky promise.

NO BAKE RAINBOW CHEESECAKE
Rainbow No Bake Cheesecake
Lifestyle Blogger Maune Legacy shares this recipe for a Rainbow No Bake Cheesecake that is perfect for your Easter celebration, unicorn party, or a Spring recipe to enjoy. With a buttery graham cracker crust, a colorful creamy filling, and no baking required; it’s sure to impress!
Ingredients
- Cheesecake
- 7 oz Graham Crackers
- 1/2 C Unsalted Butter, melted
- 16 oz Cream cheese
- 1/2 C sugar
- 2 tsp organic vanilla extract
- 1/4 tsp salt
- 1 packet of gelatin
- 2 tbsp Cold water
- 1/2 C Heavy Cream
- 1/3 C Nestlé® Coffee-mate® The Cheesecake Factory Strawberry Cheesecake
- Whip Cream
- 1 C Heavy Cream
- 2 Tbsp sugar
Instructions
- Add the graham crackers to a food processor and blend until they are finely crushed. Add melted butter and mix well.
- Place muffin mold on a baking pan. Divide mixture evenly among the six muffin molds, and with a spoon press firmly along the bottom to create the crust. Set aside.
- With a handmixer, mix cream cheese until smooth and creamy. Add the sugar, vanilla, and salt and mix well.
- Combine the gelatin packet and cold water. Heat in microwave for 5-15 seconds until it is liquid and clear. Set aside.
- Slowly add the stawberry cheesecake creamer and the heavy cream to the cream cheese mixture. Scrape the sides and bottom to ensure it's mixed well.
- Add the gelatin mixture to the cream cheese mixture. The gelatin should be warm (not hot and not cold). This is key to ensure the mixture is smooth and not lumpy.
- Divide mixture evenly into five bowls (more or less if you prefer). To achieve the pastal color, add one drop of gel food coloring to each bowl and stir well.
- Alternate spooning the different colors into each muffin mold. Once all five colors are present and the mold is full, use a spoon over the top to slightly mix the edges of the colors together.
- Place in freezer for 1-2 hours. When the top is hard and firm, you can pop them out of the molds and decorate with whip cream, sprinkles, and chocolate eggs.
Whip Cream
- With a hand mixer, beat on high for about five minutes until stiff peaks form.
- Add a drop (or two) of gel food coloring and mix well.
- Spoon into a decorating bag and it's ready to use for decorating.
