Sausage and Egg Sandwich Recipe

This recipe is so simple, and chances are you’ve made this in your home plenty of times. I won’t go into too much detail, but I do have just a couple of tips for you with this sausage and egg sandwich recipe. First, I like cook my sausage, then drain well and then add the egg mixture to the skillet with the cooked sausage. I like the eggs to be fully combined with the sausage, it just makes for a more satisfying combination for me! You can certainly cook the eggs, and then add the cooked sausage if you would like them to be more separated!

I use my handheld blender to whisk my eggs. My husband and I have used a fork and used a whisk over the years, and I promise you the handheld blender produces the perfect, fluffy egg. Another tip is to take the skillet off the heat when the eggs are still just a little wet. They will continue cooking in the skillet as you get things ready to serve. I personally do not like over-cooked eggs, so if you take them off the heat just before they are fully set, they turn out perfect!

Let’s talk about adding milk when scrambling eggs. Should you or shouldn’t you? A lot of egg recipes call of 3/4 to a cup of milk. If you were to search google you’d see that most chefs recommend leaving out the milk for fluffier eggs. I’ve tried it both ways, and I personally like a bit of milk in my eggs. Maybe it’s that I was raised in the south and my mother always added milk. But I like it, so I’ll keep adding it!

Customizing Your Breakfast Sandwich

You can add cheese to this recipe if you like.  It can either be added while the eggs and sausage are cooking, or sprinkle it on top to melt. I serve it both ways equally, but the eggs and sausage are yummy enough without cheese! This recipe also great with sautéed fresh vegetables like bell peppers or mushrooms if you are wanting to add a little color to it!

Obviously you can substitute bacon for the sausage or if you are watching your calories and like things a little spicy, check out Soyrizo (soy chorizo) which is sooo yummy. Basically anything you can imagine to add to your favorite omelette can be tossed into to your eggs for a delicious sandwich.

I like to serve this with a side of fresh fruit, typically whatever I have on hand. What type of fruit do you keep on hand? I like to stock blackberries, raspberries (although they never last very long), strawberries, and grapes. In addition I’ll keep bananas, apples, and oranges, and I’ll buy a cantaloupe and pineapple every few weeks. I would love to know what you love to have on hand for sides and snack time.

Ok, let’s get to that recipe!
