One of our favorite QUICK breakfasts is Peanut Butter Banana Rice Cakes. When I was in my early 20’s, I would often eat rice cakes with various toppings as a healthy alternative to snack food. It certainly helped stay me in great shape then! I love them now for a healthy, crunchy alternative to sugary processed foods. There are several options for the toppings but our hands down favorite is creamy peanut butter bananas for a sweet and crunchy breakfast with plenty of protein.

Bananas and peanut butter make me happy, like really happy. It’s such a YUMMY combination! Add a few chocolate chips and there’s no way I’m turning back. But that’s for another recipe post, ha! I actually can’t recall where I first saw this recipe years ago, but I do remember thinking that my kids wouldn’t eat it. Well, I was wrong! They love this and often request to have it. Before trying it my kids commented that it looked like styrofoam, and well, they were right! It does kind of look like styrofoam. But they have a great crunchy texture and with the peanut butter and banana on top are really delicious!
I mean, how cute are those little banana faces? This is probably the easiest breakfast recipe ever. It’s so simple to throw together and it literally takes seconds to spread the peanut butter, slice the bananas and serve! My big boys will eat two, and my littles will eat one. I like to serve it with fresh berries as well. You can also top this with honey to give it a little sweeter factor. We like it both ways, but my kids will eat them without the honey so I usually opt to leave it off.
As I mentioned in the first recipe in this series, I have been on the search for simple, healthy, protein-packed breakfast options because I’ve read how protein is shown to help sustain our kids longer and help them focus better during the day. I can certainly tell when my kids have eaten too much sugar and I don’t want to send them off to for the day that way! These Peanut Butter Banana Rice Cakes are both yummy and will help our kiddos thrive.

Peanut Butter Banana Rice Cakes
This healthy Peanut Butter Banana Rice Cake Recipe, packed with protein, creamy peanut butter, and banana is filling, simple to make, kid approved, and perfect for busy mornings.
Ingredients
- 4 organic rice cakes
- 1/4 cup creamy peanut butter
- 2 bananas
- 1 tbsp honey, optional
Instructions
- Spread a thick layer of peanut butter on your rice cake.
- Slice the banana and place slices all over, or make a fun kid-friendly design.
- Optional to drizzle with honey.
Recipe Variations
The rice cakes aren’t necessarily nutritious themselves, although they do have fiber and protein in them. There are now great variations to plain rice cakes like brown rice cakes, whole grain cakes and flavored rice cakes. Sometimes I’m not really “hungry”, but just need a little something to crunch on, is anyone else like this? Surely it’s not just me! Top these with peanut butter and a banana and you’ve got a high energy, protein-packed breakfast (or snack) that adults and kids can enjoy!
This classic peanut butter and banana pairing would be delicious on a cinnamon flavored one, or chocolate!! I addition you could top your PBB rice cake with cinnamon, chia seeds, or a drizzle of honey or maple syrup. If there are peanut allergies in the family, substitute your favorite nut butter or creamed cheese. Toppings can include a variety of fresh fruits like berries, sliced apples, shaved coconut, raisins, chopped nuts, dried fruit… the sky is the limit!

I haven’t had a rice cake in years, but I love peanut butter and bananas too!! I put them in my smoothies, waffles, etc so it only makes since to add this healthy little snack! I totally get needing to just snack on something sometimes. Haha
