Why I love this Protein Blueberry Muffin Recipe

I love these blueberry muffins because they are a healthier option than a store-bought mix filled with sugar. This muffin recipe is part of my series of protein-rich breakfasts. 

Ingredients

Vanilla protein powder, vanilla almond milk, and coconut oil are just a few of the nutrition-packed ingredients in this protein blueberry muffin recipe. Fresh blueberries are an ingredient that add sweetness and are full of antioxidants.

How to bake Protein Blueberry Muffins

These muffins should be baked in a 350 degree oven for 20 minutes.

Recipe Variations   

I use coconut oil instead of other oils in this protein blueberry muffin recipe because it has been shown to have numerous health benefits including encouraging fat burning, being a quick source of energy and reducing hunger.

A cup of unsweetened vanilla almond milk rather than regular milk is another variation to this muffin recipe. Almond milk has less sugar, fewer calories, and it is also cholesterol free, free of saturated fat, and it’s naturally lactose-free.

Feel free to add more blueberries to this recipe. The number of blueberries in these protein blueberry muffins are totally up to personal taste!

Chef Tips

I use protein powder in this recipe because studies suggest kids are able to be more successful in school if they have protein in their breakfast. If you have kids, you may notice their ability to focus is better when they’ve had a healthy, protein-packed breakfast!

How to Store

Keeping muffins in an airtight container on your kitchen countertop is the best way to store them for up to four days. These protein blueberry muffins can also be frozen up to three months in a single layer in a freezer bag.

How to Reheat

These blueberry muffins can be reheated after thawing them at room temperature. Wrap an individual muffin in aluminum foil and heat it for 10 minutes in a 350-degree oven.

Ingredients

  • 40 grams vanilla protein powder (1/3 cup)
  • 120 grams all-purpose flour (You could use oat flour or wheat flour.) (1 cup)
  • 2 grams baking soda (1/2 tsp)
  • 3 grams salt (1/2 tsp)
  • 10 grams tsp baking powder (2 tsp)
  • 66 grams sugar (1/3 cup)
  • 237 ml vanilla almond milk (1 cup)
  • 69 grams coconut oil (1/3 cup)
  • 5 ml organic vanilla extract (1 tsp)
  • 166 grams fresh blueberries (1 cup)

Instructions

  1. Generously spray a muffin pan with cooking spray and preheat oven on 350 degrees.
  2. Combine dry ingredients in large bowl. Mix well.
  3. Fold in the milk, oil, and vanilla. Stir just until mixed.
  4. Scoop mixture into muffin tin, filling 2/3 full.
  5. Bake for 20 minutes, or until muffins are golden.
