French Toast happens to be my actual favorite breakfast item and these French Toast Roll Ups are a great option for breakfast on the run! Really, I love all breakfast foods and I’m not sure why we don’t eat it for every meal. LOL. As I’m trying to reduce sugar in our home and provide more healthy meals, I excited to share this recipe for French Toast Roll Ups with you all today. In addition to reducing sugar, I have added nut butter to the “roll-up” portion, to help increase protein. Protein is such an important part of breakfast as it helps keep the brain functioning and the body burning calories.

Lightening the French Toast Roll Up Recipe

There are several ways to enjoy these. For my family, since I wanted to add protein and reduce sugar, I used whole wheat bread, creamy almond butter (as opposed to peanut butter),  unsweetened almond milk (instead of cows milk), and a light topping of cinnamon and sugar. I used a tablespoon of sugar for this entire batch of French Toast Roll Ups, rather than 1/3-1/2 cup which some recipes call for.

French Toast Roll Ups Recipe

These French Toast Roll-Ups are simple and quick. You'll love this healthy version of french toast that will delight both kids and adults!

Prep Time 5 minutes
Cook Time 3 minutes
Total Time 8 minutes

Ingredients

  • 10 slices whole wheat bread
  • 113 grams almond butter (1/3 cup)
  • 59 ml unsweetened vanilla almond milk (1/4 cup)
  • 12 grams sugar (1 tbsp)
  • 8 grams cinnamon (1 tbsp)
  • 14 grams butter (1 tbsp)

Instructions

  1. Cut crusts off bread, flatten with a rolling pin.
  2. Spread almond butter across slices of bread.
  3. Crack two eggs in a bowl and add almond milk, and whisk together.
  4. Combine sugar and cinnamon. I put mine in a powdered sugar shaker for even distribution over the roll ups.
  5. Roll slices of bread and press down to form roll up, then quickly place into egg mixture (not letting it sit for too long).
  6. Sprinkle with the cinnamon mixture.
  7. Heat a pan with the butter until it melts. Place roll ups in pan, cooking several at a time.
  8. Sear on both sides until golden brown and crisp. Serve immediately.

My family sure loves these roll-ups. They are crispy and sweet and easily held in small hands as we run out the door. I love giving them a healthy breakfast that will help get them through the day whether they are heading off to school, sports, camp or playing with friends.
